The steak house endures under its original owner, but five or so years ago, Brian Gordaner acquired L'Auberge, a French-Canadian spot, and brought it up to date as Chatham Street Grill. He kept the handsome bones of L'Auberge, including the slate floors and the big fireplace, but completely changed the bill of fare. Now quite eclectic in the hands of chef Stuart Martin, many Windsorites think of it as California style. Organic field greens, roasted red pepper and smoked jalapeno soup, peppered bacon-wrapped sea scallops, Asian rice noodle salad, and east-meets-west crab cakes all testify to that impression. Service by cheerful young staffers add to the appeal, and the cozy adjoining bar, much more dimly lit than the upbeat dining room, has its own personality. For those looking for fine dining in Windsor, this is a good choice, delivering all the components without any sense of pretension ---------------- Editor's Note: Located Downtown Windsor The

*************************************************************** Recipe: Bread and Tomato Salad by Sam Gugino *************************************************************** Italians may be known for pasta, but they live on bread, especially Tuscans. Leftover bread gets transformed into wonderful dishes like this one. 1
1/4 pounds ripe tomatoes 1) Core tomatoes, halve lengthwise and cut into wedges no more than 3/8-inch wide. Toss with a teaspoon of salt in a large bowl. Set aside at room temperature 30 to 60 minutes. 2)In a small bowl combine vinegar, olive oil, chicken stock and pepper. Crush the garlic clove with the side of a knife but leave whole. Add to the dressing. Stir and set aside. 3)Cut bread into bite-size cubes or break apart with your hands for a more rustic look. Add bread to tomatoes and toss well. Add celery leaves, onions and basil to bread/tomato mixture. Remove garlic from dressing, stir well and pour over salad. Toss well. Let stand 30 to 60 minutes at room temperature.
Serves 4. Sam's Cooking Tip: Salting the tomatoes ahead of time draws out the moisture and helps to create a more flavorful dressing without a lot of oil. -----------------------

Proprietors Dino Ceccucci and Gino Parco, friends since high school days, have a harmonious partnership which finds Dino handling the front of the house duties and Gino in the kitchen in his crisp white jacket with a bright red maple leaf embroidered on the collar. Appetizers, soups and salads are the same at both lunch and dinner and there are always a number of pastas among the offerings, but this is not to be confused with the Italian restaurants on Windsor's Erie Street. It's much more contemporary and free-wheeling, probably in deference to the youth of Dino and Gino, both under 30. They pay attention to the niceties of presentation, and to quality ingredients, notable in the baskets of crusty bread that come to the tables at dinner with a pot of olives and some olive oil infused with sun-dried tomatoes. Dishes I have enjoyed there include penne with fresh tomato sauce and housemade lamb sausage, fresh spinach salad, and roasted pork loin with onion jam. You may not find these precise dishes on the menu on your visit, but rest assured that Gino and Dino will have an equally appealing lineup. Food is accompanied by a nice little wine list, with most of the selections, like Dino and Gino, under 30. Coffee drinks are another specialty, with lots of whipped cream topped concoctions as well as latte and espresso. Even when all the tables are taken, Porcino manages to exude a calm, relaxed feeling. Staff members never seem rushed or harried as they go about their duties. Definitely a worthy addition to the Windsor dining scene. ---------------- Editor's Note: Located in South Windsor Porcino
